Madeleine cakes with honey – a simple but delicious recipe
90g softened butter
75g caster sugar
10g brown sugar
Pinch of salt
15g honey
100g eggs
90g flour
2.5g baking powder
Mix the softened butter, caster sugar, brown sugar, salt and honey together.
Add the eggs, then the sifted flour with the baking powder.
Leave the mix to rest for at least 1 hour and 30 minutes.
Pour the mix into madeleine trays which have been buttered twice and dusted with flour to prevent sticking.
Bake in a hot oven at 210°C for around 5 to 7 minutes.
