Serves 4
400g (2 cups) strawberries
120ml (1/2 cup) orange liqueur such as Grand Mariner or Cointreau
4 egg yolks
4 egg whites
100g caster (powdered) sugar
Pinch of salt
Butter to line the dishes
Icing sugar to dust over the top
How to make
Preheat the oven to 200˚C (400˚F/Gas Mark 6).
Butter four small soufflé dishes and sprinkle with caster sugar to coat the bottom and sides.
Dice the strawberries and marinate in the orange liqueur for 2-3 hours.
Cream the egg yolks and sugar until pale. Then mix the fruit and liquid into the mix.
Beat the egg white until stiff, then gently fold into the fruit and egg yolk mix.
Pour the mixture into the moulds about three quarters full.
Bake for 15 minutes until well risen and golden brown.
Sprinkle icing sugar and serve immediately…
