The Loire Valley is famous for its rich culinary history and superb produce. This recipe for creamy mushroom chicken is a speciality of the town of Loches, where the ancient royal castle dominates and the cobbled streets are lined with fabulous restaurants.
Ingredients (for six portions)
1 chicken
Knob of butter butter
Tablespoon olive oil
Large onion
300 ml white wine
400g Mushrooms
Couple of sprigs of thyme
250 ml cream
Truffle (optional)
Cut the chicken into 6 pieces and fry them in butter and olive oil until browned. Add the chopped onion and fry until lightly cooked.
Add the wine and stir in all the bits off the bottom of the pan with a wooden spoon. Season, add the herbs and the chopped mushrooms. Bring to the boil and leave to simmer very gently for 45 minutes.
Stir in the cream, season and add a few grated slices of truffle if you’re including it.
Delicious with mash potato, a big chunk of bread, rice or salad.
