This preparation of cherry tomatoes is a firm favourite for sunny day aperitifs. It’s very easy to make and adds a little je ne sais quoi to a humble tomato.
Ingredients:
1 punnet of cherry tomatoes
5 teaspoons of sugar
Sesame seeds
1 dash of balsamic vinegar
Toothpicks or aperitif picks
Wash the tomatoes in cold water and dry them off.
Make a liquid caramel by bringing the sugar to the boil with a little water and a dash of balsamic vinegar.
Prick a cherry tomato with a toothpick, dip it halfway into the caramel, then dip it in the sesame seeds, which stick to the caramel.
Best made within an hour or two before eating.
